But what exactly makes a "Peaberry" bean so coveted by specialty coffee connoisseurs across North Texas?

The Magic of a Natural Anomaly

In a standard coffee cherry, nature typically develops two flat-sided beans facing each other. However, in about 5% of crops, a natural mutation occurs: only a single, round bean forms inside the fruit. Because this lone bean absorbs all the nutrients, sunlight, and energy of the entire cherry, it becomes incredibly dense. This density allows it to roast more evenly on commercial equipment, packing a hyper-concentrated, vibrant flavor profile.

The medium-dark roast on this one was a deliberate choice. Tanzania Peaberry can sometimes be roasted light to highlight bright, winey notes  and that's delicious. But I wanted to bring forward the deep, rich chocolate sweetness this bean is capable of while still letting that signature Tanzanian complexity shine through. The result is a cup that's grounded and comforting but with enough liveliness to keep every sip interesting.

Bittersweet Chocolate

The first thing you notice is a deep, rich chocolate character; not the sweetness of milk chocolate, but that sophisticated bittersweet quality you get from really good dark chocolate. It's the backbone of this cup, and it carries from the first sip to the finish.

Brown Sugar

Underneath the chocolate is a warm, caramel-like sweetness, brown sugar rather than white, which means it's molasses-touched and round. It softens the cup and gives it a natural sweetness you don't need to add anything to achieve.

Raisin

Here's where the Tanzanian character really shows up. That dried fruit depth like raisin, slightly wine-like is a hallmark of great Tanzanian coffee. It adds complexity and makes the cup feel layered in the best possible way. It's the note that makes you pause and think "what is that?" in the most delightful sense.

Lime

And then  just when you think this is a rich, dark, brooding cup, there's a bright, clean pop of lime in the finish. It's unexpected and stunning. That's the peaberry doing what peaberries do best: delivering complexity and vibrancy in the same breath. It lifts the whole cup and keeps it from ever feeling heavy.

Roaster's note

That lime finish is my favorite part of this coffee. It's so distinctly Tanzanian  that bright citrus note cutting through the richness of the chocolate and raisin. It's the kind of detail that reminds you why single-origin specialty coffee is so endlessly fascinating.

How to Brew It

This coffee shines across brew methods, but here are my recommendations for getting the best out of it:

AeroPress: the gentle pressure and short brew time highlight the chocolate and brown sugar beautifully while keeping that lime finish crisp and clean. 

Drip: one of the most popular ways to enjoy this coffee and for good reason. A standard drip machine with a medium grind brings out the chocolate and brown sugar in a consistently smooth, satisfying cup. Set it up the night before and wake up to something worth getting out of bed for.

Pour-over: great for showcasing the full complexity of the flavor profile. Use a medium grind and take your time with the bloom. The raisin and lime notes really open up with this method.

French press: if you love a full-bodied, rich cup, French press will bring out the chocolate and raisin in a deeply satisfying way. The body on this bean is substantial enough to hold up beautifully to immersion brewing.

Espresso : the medium-dark roast makes this a wonderful espresso. Expect an incredibly rich, sweet shot with a complex, lingering finish. Outstanding as a straight shot or in milk drinks.
